Allyson
When sending to multiple people in the bcc: field, how do
I get the to: field to read "none" by the recipient, as
opposed to "undisclosed recipient"?  This is how I want
it to look to each recipient:

From: allyson
To: none

You probably can't -- each recipient's client will handle that a different 
way.  You could try creating a distribution list (even an empty one) 
called "None" and addressing the message to that; but I can't guarantee it 
will work.

In addition to Ben's suggestion, you can create a new Contact, specifying
"None" as the Display As name, with your e-mail address as the address and
put that in the To field.
